Barbers (and home users) don’t want their blades getting too hot. It’s uncomfortable against the skin for one. Steel being a great conductor of heat, gets very hot over time.

Ceramic doesn’t corrode
Metals corrode. Steel is no exception. Over time it’ll rust. When you use corrosive substances on steel, it will also discolour. Ceramic won’t. You can soak a ceramic blade for months in water and it won’t corrode. And it’s also highly resistant to cleaning chemicals.
